Ian Burrows is the author of the best-selling wild food book “Food From The Wild”.
Ian accepted my invitation to film a 30 minute video on Christmas Eve 2008, so amongst the family hubbub of Christmas preparation, we managed to find a quiet spot (OK the vacuum cleaner does kick in for a short while) in his kitchen.
This was my first “indoors” video, so the sound didn’t come out as I had expected, it’s a little echoey, so please forgive this novice video-maker.
The idea for “Food From The Wild” came from a two-hour talk that he gives on foraging and his life-long passion for wild food. His publisher’s chief editor spotted that he was giving the talk, and asked him to write the book.
In this 30-minute video interview about wild food, Ian discusses:
- His early memories of foraging and poaching with his father.
- Wild Horseradish for feasting and gifts.
- Secrets to preserving wild mushrooms.
- Using dried seaweed.
- Eating seashore molluscs.
- Wild food liqueurs.
- Frequently asked questions about wild food.
- What you need to be aware of when foraging for edible roots.
- What urban foragers need to be aware of.
- The importance of expert guidance when learning about wild food.
