This recipe makes about 2 litres of cordial. It is enough to enjoy and share with friends and family.
Ingredients
- 25 elderflower heads
- 3 unwaxed lemons
- 1 orange
- 1 kg sugar
- 1 teaspoon citric acid (optional)
Instructions
Prepare the flowers and fruit:
- Check elderflower heads for insects and remove any you find.
- Grate the zest from the lemons and orange.
- Juice the lemons and orange (you need about 150 ml total).
Infuse the flowers:
- Put elderflower heads and citrus zest in a large bowl.
- Boil 1.5 litres of water.
- Pour boiling water over the flowers and zest.
- Cover and let sit overnight.
Make the cordial:
- Strain the liquid through a clean cloth into a pot.
- Add sugar, citrus juice, and citric acid (if using) to the pot.
- Heat gently, stirring until sugar dissolves.
- Bring to a simmer and cook for 2 minutes.
Bottle the cordial:
- Clean and sterilise your bottles.
- Use a funnel to pour hot cordial into bottles.
- Seal bottles with sterilized lids or corks.
Store in a cool, dark place. Dilute with water or sparkling water to serve.
