Elderflower cordial is a sweet summer drink. It captures the fragrant essence of elderflowers in a refreshing syrup.

This homemade version is easy to make and far superior to store-bought varieties.

Its delicate floral flavor and hint of citrus make it perfect for mixing with still or sparkling water. It makes a refreshing drink and adds a unique twist to cocktails and desserts.

Making your cordial is a great way to enjoy the short elderflower season. It will preserve its unique taste for months.

This recipe makes about 2 litres of cordial. It is enough to enjoy and share with friends and family.


Ingredients

  • 25 elderflower heads
  • 3 unwaxed lemons
  • 1 orange
  • 1 kg sugar
  • 1 teaspoon citric acid (optional)

Instructions

Prepare the flowers and fruit:

  • Check elderflower heads for insects and remove any you find.
  • Grate the zest from the lemons and orange.
  • Juice the lemons and orange (you need about 150 ml total).

Infuse the flowers:

  • Put elderflower heads and citrus zest in a large bowl.
  • Boil 1.5 litres of water.
  • Pour boiling water over the flowers and zest.
  • Cover and let sit overnight.

Make the cordial:

  • Strain the liquid through a clean cloth into a pot.
  • Add sugar, citrus juice, and citric acid (if using) to the pot.
  • Heat gently, stirring until sugar dissolves.
  • Bring to a simmer and cook for 2 minutes.

Bottle the cordial:

  • Clean and sterilise your bottles.
  • Use a funnel to pour hot cordial into bottles.
  • Seal bottles with sterilized lids or corks.

Store in a cool, dark place. Dilute with water or sparkling water to serve.
