Flowering currant and wild thyme infused honey

SERVES 2-4

  • 50g fresh flowering currant blossoms
  • 200g high-quality raw honey
  • 2-3 sprigs wild thyme
  • Pinch of sea salt

The floral sweetness of currant blossoms paired with wild thyme creates a delicate honey perfect for drizzling over fresh ricotta or stirring into tea. Pick the blossoms on a dry morning when they’re most fragrant.

Gently shake the currant blossoms to remove any insects, but don’t wash them – you want to preserve their delicate nectar. Place them in a clean jar with the thyme sprigs.

Warm the honey in a small pan over very low heat until it just becomes liquid – you want it barely warm, not hot. Add a tiny pinch of salt.

Pour the honey over the blossoms and thyme. Give it a gentle stir with a wooden spoon to ensure all flowers are coated. Seal and let infuse in a cool, dark place for 5-7 days.

Strain through a fine-mesh sieve, pressing gently on the flowers to extract all the honey. Transfer to a clean jar.

The honey will keep for several months in a cool, dark place. Lovely drizzled over fresh cheese or fresh bread.
