A flavourful syrup with a subtle almond aroma, perfect for cocktails, mocktails, coffee, teas, or even in baking.
Rowan bud syrup recipe
- 1 part rowan buds (by volume)
- 2 parts cold water (by volume)
- 2 parts sugar (by volume)
To make a delicious Rowan Bud Syrup with a hint of almond, rinse the rowan buds under cool water to remove any dirt. Once cleaned, place the buds in a saucepan. Cover them with two parts cold water and add two parts sugar. Stir the mixture gently to dissolve the sugar.
Next, heat the saucepan over low to medium heat. Do not let the syrup boil, as this may affect the flavour. Allow the syrup to warm slowly until it reaches approximately 70°C (158°F). Use a thermometer. It is important to reach the right temperature. The syrup must be just below the boiling point. Once the syrup is hot enough, remove it from the stove. Then, let it cool completely.
When the syrup has cooled, strain it through a fine mesh sieve with care to remove the buds. Transfer the strained syrup into sterilised bottles using a funnel. Save the buds. You can dry them and use them in teas, smoothies, or baking. They add a subtle flavour to dishes. Your Rowan Bud Syrup is now ready to be used in cocktails, teas, or as a sweet addition to baking.
